As the years go by, these crustless pie recipes become classics. Basically, a crustless pie is made with an egg custard base, and a flour of some sort, all purpose or gluten free, is added so that when baked, forms its own crust. You can even take leftover Sweet Potato Casserole and use it in a Crustless Sweet Potato Pie. Just measure as you would for ordinary sweet potatoes use less sugar.

- 2 cups mashed sweet potatoes (or leftover sweet potatoes from casserole)
- 1/2 cup cornstarch (also can use gluten free flour, or all purpose flour, or baking mixes)
- 1/2 teaspoon baking powder (leave out if using baking mix)
- 1 cup sugar (may adjust if sweet potatoes are already sweetened)
- 3 egg yokes
- 1 cup milk (canned, half and half, cream or whole milk)
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons butter, melted
In a large bowl add the ingredients and mix well with a wire whisk or a hand held electric mixer. Pour into the prepared pie plate.
Bake for 45 minutes or until pie is firm. Allow to cool 15 minutes. Place in the refrigerator until serving.

After some time I slowed to a normal amount but the vegetable still holds a special place in my heart. Sweet potatoes are packed with nutrition including iron, calcium, and vitamins b and c.
Not to mention, it’s full of fiber to keep you full longer. They were one of those food that I introduced the boys to first with baby led weaning and they adored them.

So instead, I’ve gone the distance and hidden them inside one of his favorite foods: hidden veggie muffins.
- 1 ¾ cups white sugar
- ¾ cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups cooked, mashed sweet potatoes
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 2 teaspoons baking soda
- ¼ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ cup beer
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
Stir together the sugar and vegetable oil in a large bowl until smooth. Beat in the eggs one at a time, then stir in the vanilla and sweet potatoes. Combine the flour, baking powder, baking soda, salt and cinnamon in a separate bowl stir into the batter 1 cup at a time, alternating with the beer just until everything comes together. Spread the batter evenly in the prepared pan.
Bake for 35 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. Cool completely before frosting or serving.
