For muffins: beat 4 eggs and 1 egg yolk with the sugar and vanilla sugar until a thick cream is formed.

Prepare the trays for muffins, placing paper baskets or grease them with butter and cover them with flour. The composition for the dough and the one for the cheese are placed separately in 2 spirits with a large opening. cm from the dough composition, then put evenly the composition for the filling. In each form put a cherry, then add again the composition for the dough, thus covering the filling.

Place the tray in the preheated oven at 180 ° C for 25-30 minutes.

After they cool, they are decorated according to their preference. I melted 100 g of white chocolate with which I greased the surface of the muffins, then I put sugar ornaments.

Mix margarine with sugar until fluffy and creamy. Add one egg at a time, and continue mixing.

In another bowl, mix the flour with the cocoa and baking powder. Then add little by little over the egg mixture with margarine and sugar. Mix again, then add the milk, continuing to mix. At the end add the vanilla essence and mix again.

The disposable forms for muffins are greased with margarine (if they are not made of silicone), filled about two thirds and put in the preheated oven. Leave it in the oven until it passes the toothpick test.

Mix the cream cheese with the butter, first at low speed, and then at high speed for 2-3 minutes, until they become fluffy and airy. Add the vanilla extract while still mixing. Add the sugar little by little, until everything is incorporated and the mixture becomes fine. If you want to add color to this icing, add the dye after the vanilla extract. You may need another teaspoon of sugar.

  • 1/2 cup apple sauce
  • 2 eggs
  • 240 gr cream cheese
  • 1 teaspoon vanilla essence

Preheat the oven to 170C and prepare a muffin tray.

In a large bowl, mix together 3 cups of flour, 1 cup of sugar, baking powder and salt until combined.

In a medium bowl, combine milk, apple sauce and 1 egg. Stir until combined.

In a small bowl combine cream cheese, 3/4 cup sugar, remaining egg and vanilla. Homogenize with the mixer.

Pour the wet ingredients into the dry ones, together with half of the cheese mixture. Use a spatula and mix well.

Divide the dough into the muffin tray. Garnish with a tablespoon of cheese mixture. Mix lightly in each muffin.

In a separate bowl, combine the topping ingredients and sprinkle on each muffin.

Put the tray in the oven and bake for 25-30 minutes, turning the tray halfway through.

When it is ready, turn it over on a damp towel and roll it. In the meantime, make the filling. Mix the cheese with the powdered sugar, sour cream and blackberries that have been mixed in the robot. Let the filling cool for 1/2 hour and then spread it on the roll. Wrap in plastic wrap and let cool. Cut into slices and powder with powdered sugar.
