Your favorite grilled cheese add-ons: spinach, ham slices, bacon, roasted red peppers, tomatoes, etc.

    Preheat oven to 425°F. Unroll Pillsbury™ Thin Pizza Crust on a parchment-lined baking sheet. Bake for 6-8 minutes, just until the crust is set. It should be just barely light-golden brown around the edges. (Note alternative baking directions in Step 5.)

    Use a pizza cutter to slice the cooked crust into 10 small, equal-sized squares. Preheat your outdoor grill to the lowest heat setting possible.

    Top 5 of the pizza crust squares with your favorite grilled cheese combos: for CLASSIC GRILLED CHEESE, place two slices of Muenster or Colby Jack cheese. For HAM AND TOMATO GRILLED CHEESE, top your slices with two slices of Swiss cheese, two slices of ham, and two slices of tomatoes. For MEDITERRANEAN GRILLED CHEESE, top your slices with a schmear of goat cheese, spinach, a slice of roasted red pepper, and a slice of Muenster cheese.

    Place a second slice of pizza crust on top of the cheese sandwiches. Spray with butter-flavored nonstick baking spray. Place directly on preheated grill, then close the lid of the grill and allow sandwiches to cook for 2-3 minutes, or until golden brown. Flip and cook on the other side until golden brown. Serve immediately.

Expert Tips

  • Keep your kitchen totally cool by baking the bread right on the grill! Use low heat and bake on both sides until grill marks appear. Then proceed with Steps 2 through 4.

10 Grilled Cheese Recipes That Are Next Level

I’m a huge fan of all things cheese. Mac and cheese, cheesy bread, cheesy casseroles, cheese pizza, and of course, grilled cheese! It doesn’t get much more classic and simple as a grilled cheese sandwich. I used to devour grilled cheese sandwiches as a kid, and my love for them has never gone away. My tastes, however, have matured a bit. There are so many wonderful and delicious ways to prepare grilled cheese, and there are a few of my favorites! Go ahead and try one of these recipes out this week!


How To Make a Grilled Cheese on the Grill

Get a grill ready for direct grilling over medium heat.

Get out two slices of bread. Spread one side of each with softened butter or mayonnaise. (If you’re questioning the mayonnaise on the outside of a grilled cheese, have a look over here to find out about it). Flip the bread slices over. Put a couple of cheese slices onto one slice of bread. Invert the other bread onto it so that it is butter-side-up.

Transfer the sandwich to the preheated grill. Cook for 2-3 minutes, until grill marks appear. Shift the sandwich around, moving it 90 degrees. Cook for another minute or two, to get those lovely hash marks.

Flip the sandwich over and repeat on the second side, cooking for 2-3 minutes to get the initial grill marks and then turning the sandwich 90 degrees to create hashmarks.

By that point the cheese will be nice and melted inside the sandwich. Remove the sandwich from the grill and eat.


  • One 13.5 ounce ring of smoked sausage, such as bratwurst or kielbasa
  • 4 good quality sandwich rolls, such as brioche, Kaiser rolls, or semmel rolls, sliced
  • 1/4 cup butter, softened
  • Vegetable oil for oiling the grill grate
  • Four 1/4 inch slices Cooper® Sharp White Cheese (about 4 ounces)
  • 1/4 cup butter, softened
  • 4 tablespoons Dijon mustard, or your favorite mustard
  • 1 cup sauerkraut, drained
  • Dill pickles, for serving (optional)

1: Set up your grill for direct grilling. Heat one side to medium-high and the other side to medium-low.

2: Slice the sausage on a diagonal into oblong-shaped 1/4-inch slices. Lightly butter the rolls, keeping the halves together.

3: When ready to cook, brush the grill grate and oil it well.

4: Arrange the rolls on the grill grate over medium-high heat, cut sides down. Grill until the bread is lightly marked with grill marks, 1 to 2 minutes. (Watch carefully.) Set aside.

5: Grill the sausage over the hottest part of the grill until it’s lightly marked with grill marks, turning once.

6: Arrange the bottoms of the rolls on the medium-low part of the grill, cut sides up. Using tongs, divide the sausage among the rolls. Top each sandwich with Cooper® Sharp White Cheese. Put the grill lid on to keep in the heat. Grill long enough to melt the cheese, 3 to 5 minutes. In the meantime, spread mustard on the roll tops.

7: When the cheese melts, top each sandwich with a spoonful or two of sauerkraut and replace the roll tops. Serve immediately with dill pickles, if desired.

Okay ya'll. best grilled cheese i have ever made! When i read that you mix grated parm with the butter and put on the grill side of the bread, i was just a little apprehensive. But ya'll. it makes the outside of the sandwich SOOOO crunchy! Seriously, you have to try this. I used fresh mozzarella and i did add just a bit of shredded cheddar too. i mean can you have too much cheese? My hubby asked for bacon on his, so that happened. All through dinner, he just kept saying how wonderful it was.

You just HAVE to try this if you loved grilled cheese. Thanks so much for the recipe! This one made it into my written recipe book. and not many recipes make it there!

I eat a grilled cheese sandwich about 3 times a week and consider myself a big fan but I am not a fan of Parmesan cheese so I was a bit skeptical about adding it to the butter. The Parmesan was not overwhelming and it added a nice flavor and enhanced the texture to the outside of the sandwich. The only thing that I did differently is that I lightly browned the inside slices of the bread before assembling. I like my bread toasted on both sides. I'll be making this again and sharing with the family. Next time, I may spread some of the butter mixture on the inside bread slices to see what that does!

This was so easy to put together with pretty simple ingredients. My kids loved them, and so did me and the hubby. The bread is definitely the big winner, along with that butter-mixed-with parmesan. The cheese is just the "icing" on the cake. A big keeper!


Simple Grilled Kefalotyri Cheese Recipe

Greek kefalotyri cheese browns and maintains its shape on the grill, and it's so flavorful it needs little more than lemon juice and black pepper to make it great.

Why this recipe works:

  • Kefalotyri is a hard cheese that has a high melting point, making it well suited for grilling.
  • Served like traditional saganaki, the dish is minimally finished with lemon juice and black pepper.

Light one chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Brush slices of baguette lightly with oil on both sides. Place on grill and cook until lightly toasted, 30-60 seconds per side. Transfer to serving tray.

Place provolone on grill and cook until almost softened throughout, about 1 minute per side. Transfer to tray with bread.

Sprinkle provolone with oregano and red pepper flakes. Serve immediately.

Working along side USA Onions has been a fun adventure over the last 2 years. I have been able to learn so much from them about onion types, growth, harvesting, sizing but most important, which onions work best when grilling. All of that knowledge is important, however grilling onions got me most excited.

For instance, take this Mac and Cheese recipe from USA Onoins. I love the idea but it was missing one important ingredient&hellipa grill! So I translated the recipe for the grill because it brings way more flavor to the dish and makes the process way more fun. Take a look at the tips and recipe below and get grilling!

Tips for grilling the onions:

  • Use a vegetable basket to grill the onions.
  • Preheat the basket on the grill for 10-15 minutes.
  • Use olive oil, salt and pepper to season the onions.
  • Grill the onions in the vegetable basket at 375-400 degrees direct heat for 15-20 minutes.
  • Grill the onions in two to three batches for maximum flavor.
  • After grilling the onions, let them cool before adding them to your Mac and Cheese.

How to bake on a grill:

  • Set your grill up for indirect heat placing the pan with the Mac and Cheese directly in the center of the grill grates.
  • For gas grills, turn the outside burners on medium heat and keep the center burner on off.
  • For charcoal grills, place 25 lit briquettes on each side of the kettle.
  • Instead of heating up your house, use a side burner to boil the noodles.
  • The cheese sauce makes for a great dipping sauce. If you have extra, warm it up and use it as an appetizer at your next party at home.

Caramelized USA Onion Mac ’n’ Cheese
This sinfully rich Mac ’n’ Cheese is packed with decadent caramelized onions and the classic New Orleans “holy trinity”: onions, celery and pepper. If you like a kick, don’t forget the Louisiana-style hot sauce.

*Note, this recipe is for 12 servings. Cut it in half if you are feeding a smaller group.

Ingredients:

Caramelized Onions
8 Spanish yellow onions (4 lbs)
1/4 cup butter (2 ounces)
1 tsp salt
1 tsp pepper

Cheese Sauce
2/3 cup butter (5.3 ounces)
6 ribs celery, finely chopped (12 ounces)
2 red peppers, finely chopped (18 ounces)
1 Spanish yellow USA onion, finely chopped (8 ounces)
6 cloves garlic, minced (1 ounce)
1 1/2 tsp salt
1 tsp pepper
2/3 cup all-purpose flour (3.3 ounces)
10 cups 2% milk
2 tbsp Dijon mustard

Crunchy Topping
4 cups panko breadcrumbs (8 ounces)
1 cup grated Parmesan cheese (4 ounces)
1 cup butter, melted (8 ounces)
1 tsp salt
1 tsp pepper

Assembly
6 cups shredded sharp aged Cheddar cheese (1.5 lb)
4 cups sour cream
1 1/2 cups chopped fresh parsley
3/4 cup grated Parmesan cheese (3 ounces)
To taste Louisiana-style hot sauce
18 cups cooked elbow macaroni (4.5 lb)

Instructions:

Caramelized Onions

1. Melt butter in a large heavy-bottomed pan set over medium low heat.
2. Cook onions, stirring often, for 60 to 75 minutes or until golden brown.
3. Season with salt and pepper.

Cheese Sauce

1. Melt butter in a large pan set over medium heat.
2. Add celery, onion, red pepper, garlic, salt and pepper cook until soft. Sprinkle flour over top.
3. Cook, stirring, for 2 minutes. Slowly stir in the milk until smooth and thickened.
4. Remove from heat. Whisk in Dijon mustard.

Crunchy Topping

1. Toss breadcrumbs with Parmesan cheese, melted butter, salt and pepper.

1. Stir 1 cup Cheese Sauce with 1/2 cup (2 ounces) Cheddar cheese, 1/3 cup sour cream, 2 tbsp chopped parsley, 1 tbsp (.25 ounces) Parmesan cheese, and hot sauce together until smooth.
2. Stir in 1 1/2 cups (6 ounces) cooked macaroni.
3. Layer pasta with 1/3 cup (2 ounces) caramelized onions into a greased 2 cup baking dish.
4. Sprinkle with 1/3 cup (2 ounces) Crunchy Topping.
5. Bake at 425°F for 18 to 20 minutes or until golden brown and bubbling.
