  • 200g butter or cooking margarine
  • 200g caster sugar
  • 70g dark soft brown sugar
  • 120ml honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 250g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 20g rice krispies
  • 40g porridge oats
  • 180g dark chocolate chips
  • 180g milk chocolate chips

  1. Preheat oven to 180 C / Gas 4. Grease or line 2 baking trays.
  2. In a large bowl, cream together the butter, caster sugar, brown sugar and honey until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, bicarbonate of soda and salt; stir into the creamed mixture. Using a wooden spoon, stir in the oats, rice krispies and chocolate chips. Drop by heaped teaspoonfuls onto the baking trays, making sure you leave some space between each one.
  3. Bake for 8 to 10 minutes in the preheated oven, until golden. Allow biscuits to cool on baking tray for 5 minutes before removing to a cooling rack.

A good recipe to try out for a slightly different chocolate chip cookie...the rice krispies gives it a nice little crunch! The combo of chocolate chips is nice too! I found I needed to add a bit more oats so they didn't spread too much...but otherwise, I made it as written (which I encourage you to do too... then make modification if necessary!!). these are really good! i added 2 additional cups of oats, and I also used half butter, half shortining. These are one of our favorites, and I love the honey flavor. The only problem with these cookies is that they tend to be very flat, and are sometimes hard to get off of the cookie sheet.-21 Jul 2011

If you recall in my Los Angeles recap, I raved about the Rice Krispie Chocolate Chip cookie I devoured at the Tiago Coffee Shop on Hollywood Boulevard. As promised, I went home and tinkered around in my kitchen until I created a cookie similar to the one I had in Los Angeles! So here is the recipe and the process behind my Rice Krispie Chocolate Chip Cookies Recipe.

The Background

Baking has a chemistry aspect to it that I am not well versed in, so I started with a recipe from Spoon Fork Bacon. I follow this blog on Instagram so they were a familiar name that I trusted.

The first batch I made was pretty true to their recipe, which you can see here. For my second batch I felt more adventurous and decided to change a few things up! I am not a huge chocolate fan, so I lowered the amount of the chocolate chips and decided to crunch the cereal up because I found that the cereal bits ended up with a baked soggy texture in the finished product. I know that sounds like an oxymoron, but trust me on this description. It was not a good consistency. Finally, I also upped the butter. That is the one thing that stood out to me about the Tiago cookies, they were buttery goodness! The butter in my first batch did not stand out in the final product, but that second batch? Yes lord! Not only were they buttery, but the cookies spread more to my liking. So here is my modified Spoon Bacon Fork recipe with pictures enjoy!

Nancy and I have a long list of Christmas treats that we bake every year … Christmas Morning Coffee Cake, English Toffee, Frosted Sugar Cookies, Pretzel Bites and Rice Krispie Treats. The question we have every year is which Christmas Cookies to bake. We always try to do something new every year. This year it was Chocolate Sprinkle Holiday Cookies and these delicious M&M Rice Krispie Christmas Cookies. They have a soft and yummy chocolate chip cookie base but with a special blast of crunch from the Rice Krispie cereal and the M&M Minis. Super duper yummy. Give them a try this holiday season … your family will be begging for more!

Cream butter and sugars. Mix in eggs and vanilla. Add Baking soda and salt and mix well. Fold in flour.

Gently fold in Rice Krispie Cereal.

Add in the Red and Green M&M Minis. You could use regular sized M&M’s but I highly recommend using the mini version. The tiny blast of chocolate from the M&M Mini’s really adds something special to this Christmas Cookie Recipe. I pulled out the red and green M&M’s from two bags of M&M Minis and used that amount. It was approximately 1 1/2 cups.

This is what the M&M Rice Krispie Christmas Cookie dough looks like when it is finished.

Take a spoonful of dough and roll it into a ball. Press the ball down slightly on the cookie sheet. This will help you get a more uniform cookie. Bake the cookies in a 375 degree oven until they are golden brown on the bottom and around the edges. It should be 8-10 minutes.

These cookies are so pretty and festive looking. They are going to look great on the Christmas dessert table.

Ingredients You’ll Need

  • Unsalted Butter
  • Sugar(both granulated and brown sugar)
  • Peanut Butter(creamy works best here!)
  • Egg
  • Vanilla Extract
  • Flour
  • Baking Soda
  • Salt
  • Cinnamon
  • Rice Krispie Cereal(the classic stuff – don’t go for an added-sugar cereal)
  • Chocolate(keep reading for different types you can use)

Tips for Baking Cookies

  1. Shape cookie dough into uniform balls and space apart – you want 1-in balls that are all the same size with at least 1-in of space between them.
  2. Garnish cookies with additional chocolate before baking – this makes them extra pretty, plus uhh more chocolate is always a good thing.
  3. Tap sheet pan on counter – you will want to remove the cookies around the 9 minute mark and just give it a few taps on the counter, then return to the oven for about 3 minutes – this helps flatten the cookies out a bit!
  4. Bake cookies until edges are golden – depending on your oven, it may take shorter or longer for the cookies to bake. Just keep an eye on them after you return them to the oven after the tapping step. You want the edges just a light golden brown.
  5. Allow cookies to cool – don’t touch the cookies on the sheet pan for about 10 minutes. After this time they will have firmed up a bit and you can easily transfer them to a wire cooling rack to cool completely.

Choosing Your Chocolate

We love semisweet chocolate chips best for these cookies, but check out these other amazing chocolate options! You can use any of the chocolates below in either chips form or a chocolate bar cut up into chunks.

  • Milk chocolate
  • White chocolate
  • Dark chocolate
  • Butterscotch(technically not chocolate, but SO good in these cookies!)

How to Store Cookies

Cool the cookies completely then store in an air-tight container on the counter for up to 2 days. We have noticed that after around the 2-day period, the rice krispie cereal tends to go a little soft.

Because of the rice krispie cereal, I do not recommend freezing these cookies. The texture will not be the same once they are thawed.

Good thing these cookies are so incredibly fast to whip up, you don’t need to plan much ahead of time!

Incredibly soft, yet PERFECTLY crisp + chewy at the same time! Plus loaded down with aaall the melty chocolate. There’s just nothing not to love here.

Totally optional, but we love hitting these cookies with a little flaky sea salt after pulling them out of the oven. Sweet + salty for the WIN!

All the heart eyes for these cookies, guys. You may love them even more than any kiddo would and you KNOW tiny people live for that cereal.

Friday ain’t never seen a finer cookie, guys. That’s just the truth.

Rice Krispie Treat Chocolate Chip Cookies

Chocolate chip cookie meets rice krispie treats in this fun mashup!

I’m not sure where the idea for these cookies came from, but once it popped into my head I just couldn’t let it go. Chocolate chip cookies with rice krispie cereal and marshmallows baked right in— it sounds so fun, right? It’s a chocolate chip cookie and rice krispie treat all in one!

I tried a few recipes online and none really worked out how I wanted, so I started experimenting on my own. Many, many batches later I’m happy to say I cracked the code. These chocolate chip cookies are filled with crispy rice cereal and have a gooey marshmallow center. They’re fun and so unexpected!

The real challenge to these cookies is the fact that marshmallows melt at about 215°F. Since these cookies are baked at 350°F, I had to get creative to keep the marshmallows from melting and disappearing into the cookies. And I didn’t have any luck until I wrapped the cookie dough around a chunk of marshmallow. The cookie dough acted like insulation and the marshmallow puffed and broke through the surface right at the end— perfection!

These cookies are a little tricky, I’ll admit. But I’ve shared all of my tips below so you can learn from my mistakes and bake perfect cookies the first time around.

How to Make The Best Rice Krispie Treat Cookies

I created another giant chocolate chip cookie recipe for you. It&rsquos all prepared in one bowl. And might I add it is incredible by itself, so take note 🙂 Let this baby cool for 10 minutes before preparing the rice krispie portion.

Melt those beautiful marshmallows until perfectly puffed.

Here&rsquos where you need to work quick. Stir the cereal and marshmallows then take half and form into a nice round as you see below.

You will press your rice krispie a little wider than the size of cookie you are using. I am using a large cookie, so I made an even wider circle. Get it? Ok, good 🙂

HOW TO MAKE Peanut Butter Rice Krispie Treats:

  • First things first, start by lining two baking sheets with parchment paper. We will use them to cool the clusters in the fridge.

  • You will add Krispies and marshmallows to the bowl with white chocolate/peanut butter mixture.
  • Next drop the mixture by spoonfuls onto a parchment paper lined baking sheet.
  • Once you arranged them, it’s time to transfer them to the refrigerator. Allow them to cool completely for about 30 minutes.
  • Then store in an airtight container for up to two weeks.
