How to Plump Raisins

Re-hydrating raisins with flavored liquid adds moisture and additional flavor.

Plumping raisins will re-hydrate them and create fat, tasty morsels that are perfect for rice dishes, stuffing, or as garnishes for yogurt, cereal or soups. Try using flavored liquids to 'plump' the raisins with, like orange or pineapple juice, Brandy or other spirits, but even just water will make them sweeter.

Soak the raisins in enough hot liquid to cover them for about 10-15 minutes, (or until plump) then drain and serve once cool.

Alternatively, you can add the raisins to a saucepan and cover with your liquid of choice. Cook just to a boil, then immediately remove from the heat and let sit for 10-15 minutes (or until plump). Drain before serving.

Another method is to place the raisins in a microwavable bowl, cover with liquid and cook for 2-3 minutes (or until it boils) and allow to sit for 10-15 minutes (or until plump). Drain before serving.

I love that these are simple, old-fashioned oatmeal raisin cookies! They’re rich and chewy from the brown sugar and molasses, and packed with lots of oats and raisins. The dough needs to be chilled, so make sure you account for the time before you start baking. I served these the following day and they were still soft and chewy!

Cream the softened butter and both sugars together with a mixer on medium speed.

Add the eggs and mix on high speed, about one minute.

Add the vanilla and molasses and beat on high until combined.

In separate large mixing bowl, mix the flour, cinnamon, baking soda, and salt together.

The dough needs to be chilled, so make sure you account for the time before you start baking. I served these the following day and they were still soft and chewy!

Cream the softened butter and both sugars together with a mixer on medium speed.

Add the eggs and mix on high speed, about one minute.

Add the vanilla and molasses and beat on high until combined.

In separate large mixing bowl, mix the flour, cinnamon, baking soda, and salt together.

Add the wet ingredients into the dry and mix on low until combined.

Mix in the oats, raisins, and optional walnuts on low speed. The dough will be thick and sticky.

Chill the dough for 60 minutes in the fridge. The warmer the dough, the more the cookies will spread. Preheat your oven to 350 degrees while the dough chills.

Roll dough into balls and bake on silpat or parchments paper lined baking sheets.

Bake for 10 minutes. Let cool on baking sheet for 5 minutes before transferring cookies to wire racks.

1/2 cup chopped toasted walnuts (optional)

Roll balls of dough (about 1.5 tablespoons of dough per cookie) and place 2 inches apart on the baking sheets. Bake for 10 minutes until very lightly browned on the sides. The centers will look very soft and undone. Remove from the oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will continue to “set” on the baking sheet during this time.

Cover cookies and store at room temperature for up to 1 week. Baked cookies and rolled cookie dough freeze well, up to 3 months. Bake frozen cookie dough balls for an extra minute– do not thaw.

*Soak your raisins in warm water for 10 minutes before using (blot very well to dry them) – this makes them nice and plump for your cookies. OR even try them with Raisinets!
