Mix the butter with the sugar until the composition becomes creamy. In another bowl, mix the flour with the cocoa, walnut and baking powder, and then gradually pour this mixture over the butter composition and mix until incorporated.
Separately mix the egg whites with the salt powder until we get a foam. Add the egg white foam to the butter composition and mix with a wooden spoon.
Pour the mixture into a tray lined with baking paper and put the tray in the oven over medium heat for approx. 20-25 minutes. The countertop does not have to be fully baked.
While the top is in the oven, prepare it glaze: mix the yolks with the powdered sugar until they double in volume.
When the top is almost ready, take out the tray and pour the yolk composition. We spread it on the entire surface of the worktop with a spatula.
Put the tray back in the oven and leave for about 10-15 minutes until the icing hardens.
Let it cool and decorate it with grated chocolate.
We cut it carefully with a sharp knife that we moisten in warm water, otherwise the glaze will break because it is like a meringue.
