There are many varieties of rhubarb which account for how the stalks vary in color from a deep red to a pale green. Reviews
It was awful and sad. The vinegar overpowers everything.
I agree with Debbie. This turned out kind of weird actually. Why add the vinegar? It’s possible there was something wrong with the rhubarb, but I really think it was the vinegar.
I love rhubarb and had great hopes for this recipe. Unfortunately, in my opinion, the vinegar makes it taste bitter and ruins it. I added some extra sugar, but the bitterness remained.
Easy to make and delicious! I doubled the batch because of how the bundle was sold.

Rhubarb Upside Down Cake
The key to Geoffrey&rsquos classic upside-down cake? Before baking, he combines a mixture of rhubarb, sugar, honey, lemon and herbs. He sets half the liquid aside, then uses it as a syrup to drizzle on the finished dessert.
Recipe Summary
- 1 3/4 pounds rhubarb, ends trimmed, cut crosswise into 3/4-inch pieces (about 6 cups)
- 1 cup sugar
- 1 piece (1 inch) fresh peeled ginger, finely grated
Stir together rhubarb and sugar in a large saucepan (off heat) let stand until rhubarb releases some liquid, about 10 minutes.
Bring rhubarb mixture to a boil over medium-high heat, stirring occasionally. Reduce heat simmer, stirring occasionally, until rhubarb has broken down but some whole pieces remain, about 5 minutes. Remove from heat.
Place ginger in a fine-mesh sieve set over a small bowl. Press down firmly with a spoon until juices are released (to yield about 1 teaspoon). Discard solids. Stir ginger juice into rhubarb mixture.
Let sauce cool completely before serving over ice cream, yogurt, or pound cake, or using to make parfaits.

Wonderful, this is a funny answer
Even if it was, don't rub it into my soul ..
I think you have written very well, this experience will be useful to many, and this topic was described not but without such a detailed presentation
I liked it very much, I didn't even expect it.
There is something in this. Now everything became clear to me, Thank you very much for the information.
Needless to say, only emotions. And only positive ones. Thanks! Not only was it interesting to read (although I’m not a big fan of reading, I only go to the Internet to watch videos), it’s also written like this: thoughtfully, or something. And in general, everything is cool. Good luck to the author, I hope to see more of his posts! Interesting.
